7 things you never knew you could cook in a microwave

    Make yourself a portion of healthy salmon in less than 5 minutes! Simply rinse then pat the salmon dry, season with salt and pepper and pop in a microwave-safe dish covered tightly with clingfilm. Blast for 3 and a half minutes and ta dah! You’re done! Finish with a squeeze of lemon juice and serve with salad.

    If you’re thinking this looks like a cake in a cup, you’d be right. And it has chocolate chips in it. We’re sold. Just mix the following ingredients together, pour into a greased mug or ramekin and microwave for 1min 20sec. Top with a scoop of ice cream if you’re feeling naughty.
    1/4 cup of plain flour
    1/4 tsp baking powder
    1/8 tsp baking soda
    1/8 tsp salt
    2 & 1/2 tbsp caster sugar
    1/4 cup apple sauce
    1 & 1/2 tbsp milk
    1/2 tbsp vegetable oil
    1/4 tsp vanilla extract
    2 tbsp chocolate chips

    Ok, we’ll level with you. A teeny tiny portion of this recipe is cooked in a pan before being finished in the microwave, but considering all the stirring you’d have to do if making risotto in a pan, we’re willing to let it slide.
    1. Melt 3 tbsp butter in a pan then add 1 chopped onion and 1 chopped garlic clove and saute for 2min.
    2. Pour 1 & 1/2 cups vegetable stock in a microwave-safe dish and heat for 2min.
    3. Stir in the garlic and onion and add 1 cup Arborio rice. Cover with clingfilm and microwave for 6min.
    4. Stir in 3/4 cup white wine, cover and cook for 10min.
    5. Stir through 1/4 cup grated cheese of your choice and any cooked leftover veg you may have.

    Now this is clever. Vegetable crisps made in the microwave in less than 10 minutes. They’re the perfect snack. Just thinly slice a parsnip and a sweet potato then add to a bowl with 2tsp olive oil, 1/2 tsp garlic granules, 1tsp herbs de Provence and 1/2tsp sea salt. Toss to coat in the seasoning, arrange in a single layer on a plate and microwave for 2-3mins until starting to brown. Turn over and repeat. Leave to cool before devouring.

    This is known as a 1-minute quiche. It’s totally amazing – give it a go. Crack an egg into a mug then add a splash of milk, salt, pepper and 1tsp melted butter (melt this in the microwave first). Whisk, then add a small handful of grated cheese, 4 halved cherry tomatoes, half a slice of bread cut into small cubes and one chopped spring onion. Blast for 1min and voila! A single serving of quiche.

    Did you know you could cook bacon until it’s crispy and totally amazing in the microwave? Neither did we, but it’s true. Turn a bowl upside down and pop it on a plate, then drape your streaky bacon rashers over the bowl and cook for about a minute per slice. The fat from the bacon will drip down the side of the bowl and onto the plate, which is so much better than it sitting in its own fat in a frying pan. Sandwich between a split English muffin and tuck in!
