New York club sandwich

An ideal main, this hearty sandwich is perfect for lazy summer nights

Serves 4

12 square slices of bread (white, crusty rye or sourdough)
80g salted butter, at room temperature 1/4 tsp cayenne pepper 2 tbsp grated fresh horseradish (optional)
4 large leaves of crisp, green curly-edged lettuce

400g cooked chicken

4 tbsp mayonnaise

80g mango or peach chutney

16 rashers cooked crispy bacon, cooled

4 medium tomatoes, sliced

8 small skewers

Step 1) Toast the bread and place in a toast rack to cool to ensure crispness. Mix the butter, cayenne and horseradish, if using.

Step 2) Spread some of the mixture on each slice of toast. Divide the lettuce, chicken and mayonnaise among 4 slices of toast. Top each with a second slice.

Step 3) Spread with chutney and add 4 rashers of bacon to each, then cover with tomato slices. Set the last piece of toast on top, buttered side down. Secure each sandwich with two skewers and slice in half diagonally, before serving.
