Salted caramel popcorn

This delicious mix of sweet and salty popcorn makes a great party snack

Add a sweet touch to your New Year’s Eve party with these irrestible treats.

Makes enough to fill 10 to 12 paper cones
1 tbsp vegetable oil 50g popcorn maize 50g unsalted butter 75g light muscovado sugar 2 tbsps golden syrup 1 tsp vanilla extract 1/2 tsp sea salt flakes

Step 1) Line 2 baking sheets with some baking parchment. Heat the oil in a large saucepan with a tight lid. Tip in the popcorn maize, cover with the lid and heat until the popping stops, shaking the pan frequently. This takes about 5 minutes.

Step 2) Melt the butter in a separate saucepan and add the sugar, syrup and vanilla. Heat very gently until the sugar has dissolved. Turn up the heat and let the syrup bubble for 4 to 5 minutes until darkened to a rich caramel colour.

Step 3) Pour the syrup over the popcorn and stir until combined. Tip out on to the parchment paper and spread in a thin layer. Sprinkle with salt and leave until completely cold.

Serve in paper cones.
