Winter slaw of kohlrabi and apple

The quickest way to slice firm vegetables and fruit wafer-fine is with a mandolin. This H&G slaw makes a fabulous, light side for grilled salmon or steak – or adorn with ribbons of Parma ham

Serves 4
2 tbsp walnut halves
1 tbsp good-quality cider vinegar 3 tbsp extra virgin olive oil 300g kohlrabi (1 large), peeled, quartered and very finely sliced 1 small red onion, very finely sliced 2 eating apples, quartered, cored and finely sliced 2 medium carrots, finely sliced 1 1⁄2 tbsp lemon thyme or rosemary leaves, chopped

Step 1) Toast and chop the walnuts. Whisk the vinegar and oil together and season generously with salt and pepper.

Step 2) Toss all the salad ingredients and the dressing together in a large bowl and serve with a couple of breadsticks.
